Life is nuffin without a muffin....


This is the easiest muffin recipe ever. I think I can go from zero to a tray of muffins in about 30 - 35 mins tops......... it takes me longer to decide on a flavour .....


Basic Recipe - to make a tray of 6


Oven temp 200C/fan 180c/gas 6 pre heat before mixing


1 egg

60ml melted butter (vegan spread or margarine if your dairy free)

200g sr flour

125ml milk

85g sugar

Sprinkle of porridge oats or flaked almonds for a topping


fruit/flavour of choice - equivalent of 1 heaped tablespoon of fruit (frozen is perfectly fine) and/or a teaspoon of liquid i.e. coffee essence or vanilla.


flavours (my top 10) Raspberry & Almond; Coffee & Walnut; Blueberry; Strawberry Jam; Lemon balm & Poppy seed; Lemon Meringue; Vanilla & Lavender; Mixed dried fruit with mixed spice; Dark Chocolate & Cardamon; Apple Sauce.


Just mix egg, milk and melted butter together (I cool the butter with the milk before adding to the egg) stir in the sugar, add your fruit/nuts/flavours etc and then the flour.

Spoon into cases and sprinkle on the oats/almonds. Bake for about 20/25 mins.


Allow to cool for as long as you can and grab one quick ....... if you want to eat them later a quick zap for 20 seconds in the microwave really peps them up!
