Smoked Mackerel Salad

Now we are living here in Scotland it's time to embrace the local cuisine. In this area of the highlands we can purchase direct from the fisherman, deer stalker etc. We have a local fisherman in the bay and venison for sale about 10 minutes away.
Just down the road (about a minutes walk) from us is a beautiful smokehouse. It mainly smokes locally caught salmon but also has mackerel, venison, pate and cheese - lots of choices for me to work my way through!
This salad is ideal for me to cook whilst we are living in our tiny camper - it's simply just a case of boiling some potatoes and mixing a dressing.
Recipe
100g crème fraîche or mayo if your dairy free diet
1 tsp horseradish sauce
350g new potatoes or salad potatoes
juice of 1 lemon
200g smoked mackerel fillets (about 2 large fillets) - skinned
85g rocket or watercress - washed
some fresh dill, fennel or chives
loads of freshly ground black pepper
Place the potatoes on to boil and whilst they are cooking, tear the mackerel fillets into large bite-size chunks.
In a large separate bowl mix the crème fraîche, horseradish sauce, lemon juice and black pepper together to form a thick sauce - add the lemon juice gradually don't make your sauce too thin and check for taste - you don't want it too tart.
When the potatoes are cooked, drain and place in allow to cool slightly before mixing with the dressing. Now add your salad, herbs and mackerel and gently fold together.
Place on plates and serve immediately - this meal won't wait the salad goes slimy because of the hot potatoes!
Also you don't need to add salt to this dish - the smoked fish is salty enough.
