The Perfect Breakfast Waffle

I have tried various waffle recipes over the years - ones with cream, ones with just milk, ones where you whip the egg whites, ones where you don't, ones from Denmark or Iceland or Sweden - but the best recipe I've tried is from a friends maternal Grandmother, she's been making them for years and she lives in Croydon! So that goes to show you (i'm not sure what it goes to show you but it does!)


(makes about 10-12 large waffles)

4 eggs - separated into 2 large bowls

250g fine sugar (I use golden caster sugar)

250g Self raising flour

250g Melted butter

1 teaspoon vanilla paste

Zest 1 orange

Either an electric waffle maker or waffle iron

1 - Lightly fork the egg yolks and gradually add the sugar, vanilla, orange zest and butter. Once incorporated, gently fold in the flour. Set to once side.

2 - Whisk the egg whites to a soft peak and fold them into your batter mix.

3 - lightly grease your waffle iron/maker and then heat to a medium hot setting.

Keep them hot under a kitchen cloth and serve with the toppings of your choice - In our house it can range from chopped bananas & chocolate, Raspberries and cream, to just maple syrup and bacon - combinations are endless so just go for it!
